A member of the gourd family and a relative of the pumpkin, the squash has remained one of the most popular fruits around the world.
Here at Jaemor Farms, we carry a variety of squash that includes, but is not limited to, yellow summer “straight-neck” squash, zucchini, and winter squash. Yellow squash is available at our farm market from mid-May through mid-September. Distinguishing between ripe and unripe squash can be slightly challenging since we carry a variety of squash that each look different. However, the general rule is that if the squash is white or pale-green
it is probably unripe. Additionally, a ripe squash will generally be firm to the touch. You can also ask one of our friendly staff for tips on finding the best squash to take home!
From the tender shoots to the fruit itself, every part of the squash is edible. Many people find that the leaves and shoots of the squash make great ingredients in soups, salads, and omelets. Swap out those chips for some healthy roasted squash seeds which make for a great midday snack! When mashed or pureed, squash is one of the tastiest companions to any holiday dinner right alongside mashed potatoes and gravy.
Again, since we offer a variety of different types of squash, the health benefits of squash vary. However, all squash generally are low in calories; for instance, a cup of yellow squash only has around 40 calories. Squash are high in Vitamin-C, magnesium, and Vitamin-A. So don’t be stingy with the second helpings, it’ll do you good!
